Tonight, I felt like making something flavourful and unique, using up some almost-bad ingredients in my fridge.
Which led me to this: a delicious, creamy shrimp salad.
I highly recommend this as a first course😍
Spicy Shrimp Salad
Ingredients (for one starter salad)
3 oz shrimp, fried
1/4 avocado, sliced
1 Tbsp lime juice
Salt and pepper to taste
1 red bell pepper, chopped
3 Tbsp goat yogurt or any yogurt
1.5 tsp sweet and spicy Siracha
large handful Bibb lettuce
basil
Method
1. In small bowl, combine shrimp, avocado, lime juice, and salt pepper. Let sit to marinate.
2. Place peppers in medium saucepan. Pour boiling water over to cover. Boil about 3 minutes. Drain.
3. Add pepper to shrimp mix. In small bowl, combine yogurt and siracha. Add to shrimp mixture and coat evenly.
4. Arrange lettuce in serving bowl. Top with shrimp mixture and basil. Goes wonderfully with baguette!
