TASTEFUL THURSDAY: Strawberry Peppermint Juice

In honour of my beautiful roommate Mary’s birthday, I made strawberry peppermint drinks that I used to make for friends in high school. With just an oz of peppermint liquer per person, it’s perfect for a cocktail gathering or drinks with friends. It can also be alchohol free using a handful of fresh mint! I just the flavours together– it’s a different take an a mojito!

Strawberry Mint Juice

Recipe Serves 6


1 1/2 cups fresh pineapple, chopped

1 lb strawberries, chopped and hulled

3 oz peppermint liquer (or one large handful fresh mint)

1. Start by blending pineapple and liquer in blender until smooth (if using mint, add about 1/3 cup water or coconut water).

2. Add in strawberries and blend to desired consistency.  Serve with slice on the side of each glass!
