TASTEFUL THURSDAY: Blackberry and Apple Streusel
Today is important. Today is the day that the LORD has made!
And I’m sharing this recipe with y’all simply because it was a legit breakfast. Like this was GOOD.
Blackberry & Apple Breakfast Streusel
recipe yields 1 serving
1 tsp grapeseed oil
1/2 gala apple, peeled, cored, and chopped
1/2 red delicious apple, peeled, cored, and chopped
2 tsp stevia or sugar
1/3 cup quick oats
1 T apple butter
1 T pumpkin butter
1/4 tsp cinnamon
1 1/2 T almond butter
1 1/2 T peanut butter
Preheat oven to 350 degrees. Oil a serving bowl with fingers or paper towel.
In small bowl, combine diced apples, blackberries, and sugar. Toss to coat, and add to prepared serving bowl.
In separate bowl, combine oats, apple butter, pumpkin butter, and cinnamon. Stir well to combine. Add the nut butters, and work with fingers to create a consistent crumble. Sprinkle on top of apples and berries.
Bake in preheated oven for 30-40 minutes, or until the top is crunchy and “granola-like.”
Serve warm with a scoop of ice cream or yogurt.
