Happy Thursday!

When I was a preteen, tortilla chips and salsa were my go-to after-school snack (unless my mom made cookies!). Reflecting on these genuine food loves has led me to create recipes as I used to love. This salsa, really flavourful and perfect with any crunchy, salty chip, has a wide flavour profile and is incredibly versatile! 

Black Bean Salsa

(Here’s enough for 1 serving! Can easily be multiplied.)


1/4 c black beans

1/4 red bell pepper, finely chopped

1/8 jalapeño pepper, finely diced

1/4 tsp minced onion

1/4 tsp ground mustard

1/4 tsp oregano

1/4 tsp basil

1 tsp grapeseed oil

1 tsp lemon juice

salt and pepper to taste

1/2 T red wine vinegar


1. In small bowl, combine beans, peppers, and onion.

2. In a separate bowl, combine remaining ingredients with whisk. Pour liquid into bean mixture and stir to combine.

3. Serve with tortilla chips (pictured above are beet/corn chips). 

Taste and see that the LORD is good. Blessed is the one who takes refuge in Him. PSALM 34:8
