THOUGHTS THURSDAY: My Oat Chocolate Almond Cookies

Hi Friends!

Today I am still under the weather. Today I am lacking energy and “umph.” Today I praise God. Every day I praise God!

“I am the good shepherd. The good shepherd gives his life for the sheep.” JOHN 10:11

Jesus says sanctification comes through Him alone. And who is He? What is His Spirit of? He is a perfect God, one God, of overwhelming sacrifice and love and selflessness. Therefore if He is fully abiding in me, I will be always willing to lay down my life for my brothers and sisters. 

This morning in my rush before work, I had a pounding headache and chills and a warm bowl of oatmeal sounded so comforting. I whipped up a bit of a different combo which inspired a recipe idea in my head while I was bussing tables.

Oatmeal Chocolate Almond Cookies


2 cups oats

1/2 cup coconut oil

1/2 cup chopped dark chocolate

1/2 cup almond butter 

1/2 cup coconut sugar

1 tsp salt

1 tsp baking soda

Preheat oven to 375 degrees. In medium bowl, combine oats and, coconut oil, chocolate, and almond butter until the mixture comes together. Stir in coconut sugar, salt, and baking soda. Roll into balls and spread on baking sheet. Bake for 10-12 minutes or until just golden. Remove from heat and allow to cool.
