Ah, winter.

It’s never been my favourite season; I’m not gonna lie. I’ve never liked outdoor sports of any kind, I despise being cold, it takes a bit more effort to go for runs/walks, and, well, it’s not cottage season.

However, if there’s one thing I like about winter, it’s the excuse to cozy up inside with a warm drink and a hearty treat and play a game, or watch a movie, or get lost in a good book.

Enter: Baked Sweet Potato Pecan Oatmeal.

I know many people will think sweet potato in oatmeal is strange, and that it belongs only in fried, crispy form, and NOT in its mushy form. While I disagree even on that front, hear me out: you don’t notice the mushy texture in this delicious baked version–only the flavour. The wintery, sweet, cinnamon-y flavour.

You only need a few, wholesome ingredients, about 30 minutes (10 prep and 20 bake), and an open mind.

Baked Sweet Potato Pecan Oatmeal
(Serves 1)

Ingredients
1/2 sweet potato, steamed and cooled (peel if you want; I leave the peel on!)
1/4 cup rolled oats
1/2 cup water or milk of choice
1/2 tsp cinnamon
1/2 tsp salt
1 Tbsp stevia (or other sweetener of choice)
Other add-ins, as desired
Toppings
Roasted pecans
Chocolate chips
Sliced banana
Maple syrup

Method
1. Preheat the oven to 400 degrees F.
2. In a small, ovenproof bowl, mash the sweet potato. Add the oats and water, and stir to combine. Add in the cinnamon, salt, and stevia. Stir to combine. Add any optional add-ins here. You could try mashed banana, protein powder, other fruit, etc.
3. Bake in the preheated oven for 20-25 minutes, or until just golden brown. Allow to cool slightly before topping with pecans, chocolate chips, banana, maple syrup, and/or any other toppings you desire.
4. Enjoy warm! It’s also delicious cold.
