…it’s for your next 3pm hankering. You know, the in-between-lunch-and-dinner-I’m-feelin’-snacky hankering. I get it pretty much every day now that I eat unrestricted.
It takes 10 minutes to make, is easy to customize, and involves very little effort.

Goat Cheese Margherita Pizza
Makes 1 snack size serving
Ingredients
1 slice of your favourite bread (I used homemade rye bread)
olive oil for drizzling
2 Tbsp tomato basil sauce
generous sprinkling dried basil
arugula, finely diced
2-3 Tbsp crumbled goat cheese
salt and pepper
Method
1. Preheat oven to 550 degrees. Line a small baking sheet with parchment paper.
2. Place bread on baking sheet and brush with oil. Spread tomato sauce on top, and sprinkle with basil and arugula. Add goat cheese, and season well with salt and pepper.
3. Bake in preheated oven until cheese is bubbly, about 10-12 minutes. Let cool for about a minute before enjoying!
