If you didn’t read my blog post from last night, you should.

Thanks to Christine Gingerich, and her beautiful cookbook, I had to try one of the recipes today. And I turned it into a bowl of sorts, and added my favourite toppings! The recipe is all hers, I just added the toppings– and you should most definitely check it out, as it is the most valuable and incredible cookbook I own already.

Ingredients (for one smoothie)

2 tsp chia seeds

2/3 cup almond milk

1 tsp cacao powder

1 frozen ripe banana

1/3 cup frozen raspberries

Toppings: shredded coconut, almonds, cashews, chocolate peanut butter, more raspberries

Method

1. Combine chia seeds, almond milk, and cacao in blender and soak 5 minutes; blend. Add banana and raspberries and blend again, until smooth and creamy.

2. Pour into a bowl and freeze if desired, or serve immediately topped with desired toppings.
